Blue Zebra Island Lodge
Qualified and experienced applicants only! Please do not apply if you are not a qualified chef. We are looking for two chefs to join our team. Senior Chefs assume responsibilities of the head chef when s/he is off-duty, and should be able to fulfill all of the below:
Requirements:
- Malawi nationals only
- Minimum 3 years experience as a chef (for the Head Chef, must have had experience as a Head Chef too)
- Experience with international cuisine
- Excellent leadership and interpersonal skills
- Able to work and communicate well in a team
- Knowledge in kitchen hygiene & safety standards
- Able to work in a remote place, away from family (3 weeks on, 1 week off)
- Good spoken & written English
- Experience with menu planning, stock take and procurement
Key Responsibilities
- To prepare top quality meals to serve to our guests, in a timely manner. Master the existing menu, learning from our excellent team of chefs.
- Supervise kitchen and restaurant staff: manage shifts, performance, training/development
- Kitchen safety and cleanliness: adhere to Malawi Bureau of Standards and HACCP (Hazard Analysis Critical Control Points)
- Ensure safe and hygienic food preparation practices and storage
- Oversee stock control and reporting: maintain stock receiving and utilization / orders / restrict stores access
- Portion & quality control
- Menu planning
- Propose new meals to add to the Blue Zebra menu
