Position Overview:
Moments Lodge is seeking a talented and experienced Chef for our culinary team. The ideal candidate will be passionate about food, dedicated to quality, and capable of delivering exceptional dining experiences. Key Responsibilities:
– Develop and execute seasonal menus that showcase locally sourced ingredients and reflect the cultural diversity of Malawian cuisine, while also incorporating international flavors and techniques.
– Oversee all aspects of kitchen operations, including menu planning, food preparation, cooking, plating, and presentation, to ensure consistently high standards of taste, quality, and visual appeal.
– Lead and mentor kitchen staff, providing guidance, training, and performance feedback to foster a culture of excellence and teamwork.
– Manage inventory levels, monitor food costs, and optimize resource utilization to maximize profitability while minimizing waste.
– Ensure compliance with health, safety, and sanitation regulations, and maintain cleanliness and organization in the kitchen at all times.
– Collaborate with management to develop and implement strategies for enhancing guest satisfaction, driving revenue growth, and achieving culinary excellence.
– Stay informed about industry trends, culinary innovations, and market developments, and incorporate new ideas and techniques into menu development and kitchen operations.

Qualifications:
– Degree/Diploma in Hospitality or related field required; additional certifications or training preferred. Minimum of 2 years of proven experience as a Chef in a high-volume, upscale restaurant or hotel environment, with a track record of success in menu development, kitchen management, and culinary leadership.
– Certificate in Hospitality or related field required; additional certifications or training preferred. Minimum of 3 years of proven experience as a Chef in a high-volume, upscale restaurant or hotel environment, with a track record of success in menu development, kitchen management, and culinary leadership.
– Expertise in Malawian and international cuisines, with excellent culinary skills in food preparation, cooking techniques, and plate presentation, emphasizing creativity and attention to detail.
– Effective leadership and communication skills, with the ability to inspire, motivate, and mentor kitchen staff, and collaborate effectively with other departments and stakeholders.
– Flexibility to work evenings, weekends, and holidays as required.
